Luwak Coffee or Civet Coffee is coffee made from coffee cherries which have been eaten by and passed through the digestive track of the Asian Palm Civet (Paradoxorus Hermaphroditus). After collected, the beans are processed hygienically, and given only medium roast so as to not destroy the complex flavors that develop through the process. This Luwak coffee takes place only on island of Bali, Java, Sumatera in the Indonesian Archipelago. Producing no more than 300 kg per year and distributed throughout the world.
